Greek salad is my all time favorite! Iai??i??ve been eating it since I was a kid and I never get sick of it.Ai?? There is just something magical about the combination of these flavors. Sounds a bit poeticai??i??anyway, I was over at my friend Olyaai??i??s for dinner and she did a great thing I never thought of ai??i?? adding mixed greens to the combination. Itai??i??s delicious! And gives a bit of a variation to the traditional one, especially if you eat it all the time like me.

2 Tomatoes
A? English Cucumber
A? Red Bell Pepper
1 A? Dozen Pitted Kalamata Olives
1/3 Red Onion
A? Cup – Crumbled Feta
A? Bag – Mixed Green
1/4 Cup – Lemon Juice
1/4 Cup – Olive Oil
Salt and Pepper to taste

Directions:

Chop the tomatoes, bell pepper and cucumber. Slice the onion and olives.Ai?? Combine all of the vegetables and cheese in a deep bowl.Ai?? Combine the lemon juice and olive oil in a separate small bowl – add salt and pepper to taste and mix until the two emulsify. Pour the dressing over the vegetables and mix all the ingredients together. Add salt and pepper to taste if needed.
