Roasted potatoes is one of those delicious sides that seems easy to make yet it doesnai??i??t always come out ideal. This method makes them brown and crispy on the outside and soft and creamy on the inside. This is roasted potatoes MY way and I just happen to think that itai??i??s the best/easiest way ever! :)

10 – Medium Yukon Gold Potatoes
4 – Minced Garlic Cloves
A? Cup ai??i?? Minced Italian Parsley
A? Cup ai??i?? Olive Oil
1 Tablespoon – Water
Salt & Pepper to taste

Preheat the oven to 415Ai?? F.

Wash the potatoes and cut them in half. Put the potatoes in a bowl and add olive oil, water, kosher salt and pepper (to taste). Mix everything so the potatoes are coated well. Spread the potatoes on a baking sheet flat half side down and pour all of the remaining liquid from the bowl on top. Bake for 15-20 until the potatoes are brown on the bottom. Turn them over and cook for another 5-10 minutes until the other side is browned. Let cool for 5 minutes and transfer to a plate. Sprinkle the minced garlic and parsley on top and serve.
